Beyond meticulous cultivation and care techniques that ensure the highest quality of raw coffee cherries, we have dedicated years to researching and perfecting deep fermentation technology - transforming each coffee fruit into an exceptional, fully refined bean.

Throughout this journey, we were struck by an unexpected discovery: across Vietnam’s key regions - whether the Central Highlands, the Central Coast, or the Northwest - there exists a rich diversity of indigenous micro-fungi remarkably well-suited for deep coffee-fruit fermentation.

By applying these native Vietnamese yeast strains to our advanced fermentation and specialized post-processing methods, we have achieved outstanding results: PLE coffees now boast a richly layered aroma, refined taste, and a distinctive character that leaves a lasting impression.

One of PLE’s defining innovations is our Deep Fermentation Coffee technology - an extended, meticulously controlled fermentation process that regulates temperature, microbiology, oxygen, and humidity.

Deep-fermented coffee delivers:

  • A pronounced aroma, with natural ester derivatives that evoke fruity, silky notes

  • Enhanced sweetness, resulting from the breakdown of starches and intrinsic sugars

  • A clean after-taste, with reduced sharp acidity and excellent balance

  • A fuller, richer body, offering a round and satisfying mouthfeel

  • High flavor complexity, ideally suited for Specialty Coffee
